Springfield Estate Méthode Ancienne Cabernet Sauvignon 2015 750ml is an iconic single-vineyard Cabernet Sauvignon from Springfield Estate in Robertson, renowned for its uncompromising winemaking philosophy and exceptional ageing potential. Produced from old Cabernet Sauvignon vines rooted in a rocky, mineral-rich outcrop, the grapes are fermented using whole berries with indigenous yeasts before undergoing spontaneous malolactic fermentation in barrel. The wine is matured for two years in new French oak barriques and then cellared for a further four years in bottle before release, allowing its powerful structure to soften and its complexity to fully develop. Produced in extremely limited quantities of only 17 to 20 barrels each vintage, the Méthode Ancienne label represents the very best Springfield can achieve.

The nose is beautifully layered with aromas of blackcurrant, cassis, blackberry, cedar, graphite, and cigar box, complemented by notes of dark chocolate, pencil shavings, and subtle oak spice. On the palate, concentrated dark fruit is supported by firm yet refined tannins, vibrant acidity, and remarkable mineral freshness, creating a wine of exceptional depth and elegance. The finish is long, complex, and persistent with lingering notes of cassis, cocoa, cedar, and savoury spice. Springfield Estate Méthode Ancienne Cabernet Sauvignon 2015 pairs superbly with grilled rib-eye steak, roast lamb, venison, slow-braised beef, and mature hard cheeses, while rewarding extended cellaring for many years.
